From Her Kitchen to Yours: A Woman’s Love Served in Pancakes
Every Sunday morning, Nancy would wake before the sun, tiptoeing through the quiet house so as not to wake her little ones. While the world outside was still dark, she lit up her kitchen—filling it with the sizzle of butter and the sweet smell of vanilla.

1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
A pinch of salt
1 cup milk (or plant-based alternative)
1 egg
2 tablespoons melted butter (or ghee)
1 teaspoon vanilla extract (optional, but Meera never skipped it)
The Method – Soft, Fluffy, and Full of Love
Step 1: Mix the Dry Stuff
In a bowl, combine flour, sugar, baking powder, and salt. Stir well.
Step 2: Add the Wet Ingredients
In a separate bowl, whisk together milk, egg, melted butter, and vanilla. Slowly pour the wet into the dry, gently folding until just combined. (Lumpy batter = fluffier pancakes!)
Step 3: Heat and Pour
Warm a non-stick pan over medium heat and add a dab of butter. Pour about ¼ cup of batter per pancake. Wait for little bubbles to form on the surface—flip, and cook the other side until golden.
Step 4: Stack and Serve
Layer them high, like Nancy did. Add syrup, fruit, or just a bit of powdered sugar. Simple. Honest. Perfect.
